flourless brownie cake.

and another chickpea recipe.

these brownies are delicious. my mother-in-law made it and we loved it so i had to give it a shot. her’s was more like a cake, mine was more like a brownie because of the water i added when mixing the chickpeas. so i think i’ll call it a brownie cake. but the name doesn’t matter. its all about gluten free chocolatey goodness which is accepted by all in this house.

ingredients:

-1 can of chickpeas, drained and rinsed.

-1/2 cup water

-4 eggs

-3/4 cup white sugar

-1/2 tsp. baking powder

-1 1/2 cups chocolate chips

-confectioners sugar for dusting

directions:

-preheat oven to 350. grease an 8 inch pan.

-blend chickpeas in blender. add water as needed and blend until smooth.

-pour chickpeas into mixing bowl along with the eggs, sugar and baking powder.

-melt chocolate chips in microwave in 30 second increments. add to chickpea mixture and stir until combined.

-pour into greased pan. bake for 40 minutes or until toothpick comes out clean.

-dust with confectioners sugar just before serving.

i doubled the recipe and used a 9 x 13 pan. that means i used 8 eggs which seems quite excessive, but it didn’t taste egg-y at all. these brownies are so moist…it would take no effort to eat the whole pan in a day.
