gluten free baking can be tricky. but this flour mix has made my life so much easier. i’ve tried several gluten free flours. bob’s red mill pre-mixed gf flour was not great or versatile. another blend of flours had a little too much masa harina. but this mix is where its at. i’ve used it for a couple months now and have found it to work well in everything. i haven’t mastered bread with this blend, but i plan on trying that in the near future. bob’s red mill makes each of these flours and i buy it in bulk on amazon. they have everything and i’m a prime member so shipping is free and fast.
give this blend a shot, you won’t be disappointed.
-1 1/4 cup brown rice flour
-1 1/4 cup white rice flour
-1 cup tapioca flour
-1 cup sweet rice flour
mix well until streaks disappear. i usually double this and store it in a big container in the fridge. i also store the leftover unmixed flour in the fridge. some recipes may do well with flour at room temperature, so take it out ahead of time if that is the case.
so, in recipes, i substitute regular white flour with this mixture 1:1. you also need to add xantham gum as you bake. i don’t add it to my mix because different recipes call for different amounts. if its not a gluten free recipe and it doesn’t specify xantham gum amount, i usually add 1/4 tsp. per cup of flour.
you’ll be amazed at how versatile and delicious this flour mix is! baked goods turn out moist and free of any funky after tastes. YES!
