HOLY COW. these are amazing.
i’m kind of obsessed with coconut oil. i love the smell and it serves so many purposes.
i’ve had a hankering for good cookies (i’m really picky about cookies…they have to be good, insanely good).
so i made these and like i said, HOLY COW. these the insanely good cookies i was talking about. they’re crispy and chewy and sweet and you can totally taste the coconut which is my favorite thing.
-1/2 cup coconut oil, melted
-1/2 cup white sugar
-1/2 cup brown sugar
-1 tsp. vanilla
-1 1/2 cups flour
-a pinch of salt
-1/2 tsp. baking soda
-3/4 tsp. baking powder
-1/2 cup mini chocolate chips (i used heath bar chips in some, too)
-preheat oven to 350.
-beat coconut oil and sugars until creamy. add vanilla and egg and mix well.
-combine dry ingredients and slowly add to wet ingredients while mixing.
-stir in chocolate chips.
-drop by spoonfuls onto a parchment paper lined cookie sheet.
-bake for about 9 minutes or until slightly browned. (i used a convection oven and baked at 325 for about 8 minutes. i like my cookies a tiny bit on the rare side.)
