shamrock shake cookies.

you read that right. shamrock shake cookies. if you love shamrock shakes as much as we do in this house, you will really like these cookies. they’re a shortbread consistency with creamy, whipped frosting. oh man, they’re good. no amount of netflix nutrition documentary watching could sway me from eating these. although i think i’ll limit my making them to once a year.

cookie ingredients:

-2 sticks of butter, softened

-1 cup powdered sugar

-1 tsp. vanilla

-1/2 tsp. peppermint extract

-3 or 4 drops of green food coloring

-2 cups flour

frosting ingredients: 

-1/2 cup butter, softened

-1 1/2 cups powdered sugar

-1 1/2 tsp. vanilla

-1/2 tsp. peppermint extract

-1 to 2 tbsp. milk or cream


-in the bowl of a stand mixer, beat butter, sugar, vanilla, peppermint and food coloring until smooth. slowly add flour while mixing until dough comes together.

-put dough on a sheet of wax paper that has been lightly floured. roll into a log about 2 inches thick. wrap in wax paper and refrigerate for an hour or two.

-preheat oven to 325. remove dough from fridge and slice into approximately 20 pieces.

-bake on an ungreased cookie sheet for about 15 minutes until the edges have turned slightly brown. remove from oven and let sit on cookie sheet for a minute. then transfer to a cooling rack.

-now for the frosting. whip butter in the bowl of a stand mixer for about 30 seconds. add vanilla and peppermint and mix. slowly add the powdered sugar until combined, then add milk or cream. whip frosting until light and fluffy.

-let cookies cool completely before frosting.
